Ok, me AGAIN! I think your recipe on pintrest has an error??? I've made this a couple times and it turned out awesome. I finally went to pinterest and wrote down the recipe. It has not been turning out. It's small, never really rises. I just sat down with my hand written recipe and watched the video again, SALT in video is 6g yet salt on pinterest says 12g. I am assuming 6 is right.

Awesome recipes! Just a thought: For the Hostess pastry type filling, you may want to try a little softer version of the Cannoli filling instead
I attempted to make these slightly different because I do have food sensitivities to gluten, eggs, dairy and baker’s yeast. I used your bread flour recipe. I had to substitute eggs for golden flaxseed and I used a vegan butter. Instead of yeast I used my sourdough starter. Mixed results for this experiment. I made 6 croissants and the vegan butter melted out of them too fast causing them to deflate. I attempted to freeze the second 6 croissants until they were firm and frozen, then bake them. The rise was amazing but the bottom burned. Next attempt will be using a raised baking rack and I’ll lower the temp sooner. Any other suggestions would be great! The dough was awesome to work with and the flavor of the croissants is so good. I topped them with an orange glaze, yummy!

You could try a Danish dough whisk or a handheld mixer (if your handheld mixer has a dough hook like mine does, that would work well).
These are so beautiful. I have recently been diagnosed with a gluten allergy. Most would be incredibly disheartened, but after 18 years of suffering, I finally feel like I have closure for my medical issues! It’s definitely an adjustment. I was wondering if you have a cookbook? I’ve visited your lovely website, but I’m a cookbook gal! If not, please start pitching a cookbook to publishers! With your following and glowing reviews, I feel like they would snatch you up! Or, you could absolutely self-publish and get your investment back for sure! I’m sure you’ve thought about this before, or if you’ve already published, please direct me where I can purchase ASAP!
I hear you about the diagnosis. If not for my celiac diagnosis, I don't know where I'd be today. Not doing well, that's for sure. I look at it as a blessing in disguise. I would absolutely LOVE to write a cookbook. I'm thinking small right now, possibly an ebook to start. I have to do more research on what it takes. Thank you so much!!
@@LetThemEatGlutenFreeCake An ebook would be wonderful. If you’re interested in traditional publishing, I believe you don’t need to have the book written, only the outlined idea of it with examples. I work in literary magazine publishing so I only have a narrow idea of what it takes to get a cookbook published. But being in the nonfiction category, agents and publishers typically just want to hear the pitch and you have to already have a significant audience to market the book to, which you have! I’m confident that you’d do well with traditional publishing and self-publishing, whichever you choose. It takes a team either way! If you have any other questions, I’d be happy to point you in the right direction.

Can the dough be frozen? I really want to make these, but only have two people in my household. Even if I halve the batch, 12 donuts is still a lot. But if possible I'd love to freeze them!
Yes, you can freeze the dough! You can either bulk freeze it in plastic wrap and a baggie, or you can cut out the donuts, place them on a baking sheet lined with parchment, and freeze until solid. Then store in a ziptop bag and when ready to use, remove as many as you want from the freezer, place on a parchment-lined baking sheet, cover loosely with plastic wrap, and allow to thaw and rise until nearly doubled in size.

That, or you could add to another starter you might already have, or you could start another starter in a separate jar.

Hi Kim! I am on day 2 of my starter using brown rice flour. Today when I went to feed, I saw a little bit of mold on the side of the bowl (blueish grey) color. I used a spoon and scooped it out and continue with the feeding. Is that alright? I put it in a glass Nobel covered with a paper plate like you did. Do I need to trash and start again?
I wouldn't trust it. I would dump it and start over.

Im going to try this thank you! Can I use can I use my Bobs One to One baking gluten free flour?? The ingredients are sweet white rice, whole grain brown rice, potato starch, whole grain sorghum, tapioca flour and xantham gum. Thank you!
I would not recommend using a flour BLEND for sourdough starter (including my own). Using a single whole grain flour is your best bet. There are several listed in the recipe post.
How many days will these last?
A few days, or frozen for up to 3 months (see recipe for info).
Mine stopped growing when I feed it 😅 I’m not sure what to do about that. It still smells quite sour 🤷🏻♀️
Keep going! It will sometimes look like nothing is happening, but that will change.

What can I replace egg with or can I just skip it?
No, you cannot skip it. It's there for a reason. Unfortunately, I don't know if this recipe can be made with an egg substitute as I haven't tried it. You could try one of the egg substitutes (flax egg, chia egg, aquafaba, etc).

Can you make it with almond milk and do you need to do your flour blend?
You should be able to use a different flour blend, but I haven't tested it with one so I can't say for sure. You can make a buttermilk with almond milk and a couple tablespoons of white vinegar or lemon juice. Stir and let it sit to thicken and "curdle" a little bit.

your recipes are straight from heaven.. thank you so much for that.. the only problem I face is when I reduce the ingredients I think it messes up the result. so I have to make the whole thing and I'm the only GF in fam.
I'm so sorry about that! I wish there was a way I could correct, but unfortunately, because I make my own blend and it based on grams, the only way I can fix that is by making all recipes in grams and not cups. There are so many people that are so resistant to that change, though, so I can't do that at this time. Unfortunately, the only alternative right now is to break out the calculator and figure it by hand. So sorry 😞
What gluten free and or keto flour can I use that will bring a similar texture to all purpose flour, do you know? I’ve tried 2 types of flour and still want a regular tasting all purpose flour taste instead of almond or coconut flour taste.
My gluten free all purpose flour blend is, in my opinion, the BEST! You'll find the recipe linked in the description box!!
